What is better than cookies for breakfast? How about healthy and TASTY cookies that are gluten-free, sugar-free and can be made vegan. Trust me, they're delicious! They make a great anytime snack, like an energy bar, but you know exactly what's in them.
Buy as many of these ingredients as you can in bulk and package-free. I can find all of them, with the exception of the blueberries which are always undoubtably in plastic clam-shells, so sad. From April to September you can check your local farmers market, to see if they have them loose, otherwise you can buy them at the farmers market, transfer them to your own container and hand back the clam-shell. The farmers are usually pretty happy to take back their packaging. And these little steps towards rejecting plastics can really have an impact if we all start to do them. If we demand (politely) an alternative, eventually they will supply one, I hope! And in the meantime, they will be able to reuse the packaging or at least will have to deal with their safe disposal.
Ingredients -makes about 16 cookies
2 cups rolled oats
1/2 cup oat flour
1/4 t baking soda
1/2 cup coconut flakes (optional)
1 1/2 T chia seeds
1/4 chopped almonds (optional)
1/4 t salt
2 mashed bananas
2 T honey (use maple syrup if you want it vegan)
1/4 melted coconut oil
1/2-3/4 cup blueberries (or strawberries or 1/4 dried cranberries if you don't have any fresh fruit)
1 t vanilla extract (make your own, recipe coming soon)
Instructions
Preheat oven to 350 degrees F. Line or grease baking sheet. In a large bowl mix dry ingredients: oats, oat flour, baking soda, coconut flakes, chia seeds, almonds and salt. Stir in bananas, honey, coconut oil, and vanilla . Once mixed together well, fold in the blueberries (as many as you like) or other fruit gently. Let the mixture sit for 5-10 mins. to set, this will make it easier to work with.

Form 2 1/2 inch balls and press into slight disc shapes on baking sheet. It is best to form them by hand. Not having gluten or eggs can make them a little harder to form into balls, but letting the mixture sit really helps.
Bake at 350 degrees for 25-30 mins. until they brown a little on the edges and are golden on the bottom. Cool in pan 3-4 mins and then transfer to cookie racks to cool. Enjoy!
